Viking wants Mexican rice with dinner next weekend. I've got my
tortilla recipe down pat, the pico de gallo is just the way Chewy likes
it, brisket is a breeze. But I've not got a really *good* recipe for
Mexican rice.

My Mexican friends tell me the secret is in adding a quarter cup of
sugar. It will be interesting to see what Norma has to say. Does she
have a good mole recipe?????
Dunno. I don't think I've ever tried mole.

Methinks that will have to wait until after the craft fairs. I'm tired
from re-batching 3 batches of soap in the past two days. I've got two
more batches I'm not happy with that I'll be re-batching tomorrow. No
energy to try something new ATM.

Ack. I don't know how to do the characters in Spanish.
It's mole` ... mo-lay. I hope you weren't thinking MOLE.
Your /contemplative look leads me to worry that you might
be!
There was a little restaurant in Oxaxca years ago where I first
ate it and loved it. Then I found a little restaurant in Oregon
that served it - a perfect match. We moved to Las Vegas and have
spent the last three years trying Mexican restaurants, looking
for a mole` we "loved." No such luck. My attempts have all been
hideous. Even *I* won't eat it! Every time a friend or relative
heads down from Oregon to visit, we demand they go by and get an order of
mole` to go before coming and bring it to us!

You still have to send me some pictures of the soaps.

Um I'm sorry to say, I hate Molé so I never really paid attention to
how it was made, but I would be happy to check out a few different
recipes, that you can try out. I know some families will actually use
chocolate in their Molé. (My mom didn't, that's one of the few things
I know about the process).
As for Mexican (also known as Spanish rice, I'm sure there used to be
a difference but it's gotten blurred in recent times), my mother nor
anybody I know adds sugar to their rice. But depending on the person
who makes it different things can be added. My mother adds tomato soup
cubes (tomato soup cubes can be found in the Mexican food section of a
market, and also she adds chicken broth (using chicken cubes or
boullion is okay as well, also onion. Knorr is the brand she uses (so
do I). Also other ingredients are peas, carrots, sometimes corn. She
likes to make it in a big pot and put the flames down real low so it
steams the rice.
Oh I forgot to mention one of the steps she does is to stir fry the
rice in oil (regular vegetable oil is fine), until it's lightly brown
in color (this is before you start adding the other ingredients).
After that you put in the water and the tomato and chicken soup cubes,
I can't remember if she sautees the onions when she's sauteeing the
rice or just after when she puts in the cubes because the onion will
soften while it's getting steamed on low flame in the huge pot she
uses. You don't have to use a big pot though, she does it because
everybody wants rice when she makes it. Oh and she also sometimes adds
sliced hard boiled eggs in it.
However I just sautee the onion with the rice, and just cook the rice
normally, because I don't like to wait a long time for my rice. It
still tastes good.
My little twist on the recipe is that I add in oregano, basil, and
thyme, so it gives in an Italian herb touch to it. So I break a bit
with tradition.
Let me check out some recipes and I'll post both the Mole and other
rice recipes that I find. Me and mom don't measue when we make rice so
it's hard to put down an official recipe.
I hope this helps.

While pressing the Alt key down on your keyboard, type in 0233 on the
numerical part of your keyboard (near the Num Lock key). I'm too tired
to remember the official name of that side of the keyboard... Make
sure to type in the 0 or else it won't work if you just type in 233.

No matter how good a person makes it, I won't eat it. For whatever
reason I just don't like it. Even the version made with chocolate. But
bring me tamales or almost every thing else (there's a few weird foods
I won't eat, even if I tried it before - this does not include Menudo,
I love that stuff). But anything with "Patas de puerco [pig's feet]",
sesos [beef brain], yuck. I don't know why Menudo doesn't bother me, I
know it bother's others who get disgusted by tripe. But to me it
tastes good, especially when it's made right.
That's one of those foods that reminds me of my Grandma. She made
excellent menudo.
I don't make it or guacamole because sadly hubby doesn't like it. If
daddy won't eat it, kids won't eat it as well.
I thought it might be mole', like ole', but I wasn't sure. I looked for
a few recipes. I think I'll have to have a bit of time where I'm not
stressing and/or working my butt off before I try chocolate-covered
chicken. :-/
Me? Refusing chocolate covered *anything*??? I must be sick!

It's hard finding *good* ethnic restaurants of any kind.

Yep. There's a goat dairy down the road a piece. I was individually
wrapping soaps in plastic wrap at 6am this morning. Got one batch (42
bars) done. I've got another 84 rectangular bars and about 2 dozen
round bars ready to wrap, plus the batches I have to re-batch today.
One of these days, I've got to get myself some equipment, stop doing
*all* of this work by hand.
LOL... I don't measure, either, except with the tortillas. I've not
done them long enough to eyeball it. The pico de gallo I started doing
just because I didn't want to run into the store every time I wanted
some. It was a matter of, "hmmmmm... it's got tomatoes <chop... chop>
That looks like about enough. hmmmm... cilantro... green onion...
<chop... chop> That looks about right. I think I want a bit of garlic
in there, too. And lime juice. Everything down here has lime juice,
right?"

I appreciate it, Norma.
The holidays are almost here. I'll re-post my eggnog and Irish creme
recipes before long.
Most definitely!! Add tongue to the list. <grimace>
I've still got to borrow the neighbors' digital camera. I was going to
do that this weekend, but didn't get around to it. I found a lady who
makes sunbonnets, too. I'm going to be doing up some baskets that have
a sunbonnet, a couple bars of soap, and a scented candle. I've got to
get that done, ASAP. Chewy and I are going to make some flyers. And
he's going to get my website up and running as soon as I have the pics,
I hope.

This is funny, but the taste itself of tongue doesn't bother me, but
the thought of eating "lengua" does gross me out so I don't eat it.
With the other foods it is both the taste and the thought of it.

don't care for molé.

There's a Cuban/Spanish cuisine restaurant I've been meaning to try.
The Spanish have a dish that I like called "Paella Valenciana".

If you are going to make this on a regular basis, you should. You are
gonna really tire yourself out doing all this work. But I bet the
results are wonderful.
Do you make oatmeal soap?

Okay, either that or I could just check them out on your site.
By the way the horchata came out good. It didn't take too long to
process it and add the sugar and more water to make a gallon of it.
Also my mom told me to add some vanilla. I called her and asked her if
she had ever made it the regular way and she said she has made it that
way. So she gave me some tips.
The vanilla was a good idea. It wasn't part of the recipe I got. Next
I've got to try almond extract. I've just had two glasses of it.
Yummy.
I've got to see if adding Splenda or Nutrasweet will be okay to reduce
the calories, since I'm looking to make it on a regular basis.
Sounds good.

Yep. All my soaps are goats milk soaps. I've done plain, oatmeal,
honey, oatmeal-n-honey (my fav), lavendar, rose petal, cornmeal, and
olive oil. And I take requests. I love having a good reason to try new
soap varieties.

Ok, my favourites are coconut oil soap (lovely moisturising oil, plus
wonderful coconut smell) and tea-tree oil soap (mild antiseptic, very fresh
smell, but takes getting used to).
Those are 'summer' soaps.

I'll save this and see about making some.

Woman, stop your batching! ;-)
I'm sure it's tough to stop batching and twineing.
Just 4 more days 'til the craft fair!
Gotta get the soaps wrapped in plastic wrap. Still have to make labels
and put them on the soaps. And my friend's FIL just died, so we'll have
her 2yo tomorrow night through Sunday while their out of town for the
funeral. Since she's the friend I'm doing the craft fair with, I'll
also have all her candles to sell.
Uhm, why does Chewy keep telling me to quit stressing? I've no idea
what he's talking about. :-^

Twining? There ain't no twining around here!
However, we *did* have something to go with that cheese. Now, what was
it???

for something like that :)

Good luck at the fair. Sorry about your friend's FIL passing away,
though.
Best wishes with the kiddos.
Some do, but I've not gotten myself funded well enough for that... yet.
:-)
Currently, my soap is wrapped in saran wrap.
Thanks.

a "this old house" and having a baby in the same week. ;0))
-just burned out from too many summers and falls trying to sell a little
piece of myself and becoming an increasingly lousy sales woman.
Okay,so here's my favorite rant about art fairs:
Keep in mind I have a 4 year fine arts degree, I work with clay, often mix my
own glazes from the raw materials, spend several weeks, many hours each day
producing work for a weekend show, where I sit/stand, rain or shine about 12
hours each day, haul heavy equipment and products, set up,break down, and then
I often have people walk into my booth, look around, and say,
"So,um,do you make this stuff?"
:-) :-( :-)
Now before you think I'm raining on your parade,Kitten let me say that
despite all that,I still like doing shows! And I wish you a successful one.
You'll know you did well if you buy stuff there and still have money in your
pocket when you go home!
Ps. I like almond soap.

I did think it made a cute pun though - batching and twinening.

Well, I hope your soaps are a success, and don't work yourself too
hard. Remember to take a break now and then.
I'm wondering how much of my being sick yesterday has to do with that.

What's almost-but-not-quite funny and kinda frustrating is the way our
friends are freaking out over this. I don't think they've ever done
things like this. *She* is all wound up about it, especially now that
his father has died and they'll be away for the funeral. *He* was
telling me about how careful I'll need to be about collecting the right
amount of taxes, etc. After a bit of it, I reminded him that I've been
in retail and that I used to do sales tax reports every month. It was
soooo hard to keep my eyes from rolling as he talked. I love these
two. They're wonderful people. But they get so wound up about things.
I get wound up about things, too, but *different* things than they get
wound up about. Know what I mean?

Cool. Another type of soap to make this winter. Thanks!!
Kitten
Are you feeling better today? The tummy crud is going around here too.
Not 10 minutes into my class this morning, a little girl informed me she'd
been sick last night and her mom said she could go to school if she felt
better, and now she was having a tummy ache again. I promptly escorted her to
the bathroom and called her mom.
Grrr! I can't stand parents who send their kids to school sick!!!
Especially with *anything* GI related!!!! I'll take being sneezed on now and
then...(rant over)

Yep. Unfortunately.
And I too have a hard time controlling the "rolling of the eyes" thing when
I feel someone is stating the obvious and /or being too
annoying/overbearing...
It sounds like a control issue. Not control over you,but their own sense of
lost control /nervousness because they won't be at the show to sell their
own things.
It reassures them in a neurotic way to say those things to you-about sales
taxes,or whatever.
Stress is about loss of control over something.
So that is my penny's worth of human psychology for today,
and now feel free to roll your eyes at me 'cause I can't see ya doing it.
;-)
Now go back to yer batchin' and twining,
its much better than the thing you can substitute with an" i " for the "a"
on the first word, and dropping the "t" on the second word. Get it?
teehee!
