What YOU might not understand is that most waitstaff are not that
great - or more directly, piss poor. The most memorable one I can
think of was in a corporate dining room where there was no tipping.
Second most would be a local Greek gal in a diner. Third would have
to be the chain steakhouse that features peanuts on the floor and a
staff that does a line dance. The 2 "best" restaurants we have
recently been in had mediocre staff.

What does that tell you? That in THIS economy, someone would be so fed up
with the job, they would up and walk like that? I wonder what charming
customer prompted that? Do you really not comprehend how friggin' rude
people are at times? And the staff is expected to take it. No...they are
REQUIRED to take it...and smile.
And why blame the hostess thrust into the job?
I know you will get a poor server from time to time. Sometimes you're
dealing with an inexperienced person...others it could be the place is
shorthanded for staff and/or unusually busy. Sometimes folks just have a
bad day. When I am not particularly happy with the service, I tip only 15%.
But I always normally tip around 20% and have gone above that for someone I
liked a lot. I have even mentioned to owners or hostesses when the service
was terrific.
What some people fail to realize...or pretend to not understand...is that
the gratuity is often the greater portion of nearly any service related
employee. They literally could not subsist on the meager salary provided by
the employer. When you withold the tip...they aren't even getting paid for
their work. Imagine if you didn't get paid sometimes by your boss for ANY
reason.

I can certainly understand the concept of mediocre staff. Unfortunately,
waiting on tables is frequently seen as a 'temporary' job, so there are
many who are untrained, and frankly don't care.
Victoria is a tourist destination. I've always figured my job is to make
the dinner an experience (preferably a good one). I know the city
backwards and can tell visitors where to go (in the nicest possible
way). I can usually chat with them about the city, their city (having
traveled extensively), sometimes in their own language (I speak four
languages, which helps), make suggestions, et al. On top of that I pride
myself on giving prompt, courteous service, keeping wine glasses topped
off, clearing the table as quickly as possible.
Sometimes I can't. Usually when it's busy, but most customers can see
what's going on. I think of it as waiting in line at the supermarket.
You have to do it, can't rush it, and unless the cashier is talking on
the phone, bitching isn't going to speed up the operation. Customers can
tell when a waiter's busy.
I have bad days. The kitchen has bad days. I can joke my way out of it
sometimes, but usually say nothing that sounds like an excuse. There may
be reasons, and the customer can usually pick up on it.
Sure, sometimes there's lamentable service and the gratuity should
reflect that. I have high standards as a customer because I've done the
gig. What I don't understand is that most waiters eat in restaurants now
and then and should also understand what the customer expects.

Well, technically you needn't tip a hostess, so that's a no-brainer. But
the food should have been rejected as 'unwarm' :-), a complaint lodged,
etc. I'm stunned at how many horror stories I hear from customers (not
necessarily mine) when all they had to do was complain.
You see, a restaurant is one of the last places where you can complain
and expect (and usually get) instant gratification. It's the nature of
the place. Why not complain? It's not a garage where you're promised the
car at 3:00 pm and it's not ready. What do you do? Take it anyway?

This wasn't in this economy, it was a while back. The restaurant was
anything but busy and the service was slow even before that. She sat
around talking with the hostess. All the hostess did was deliver two
cold plates.
I don't begrudge wait people their tips, and I usually overtip. It is a
tough job and they have to deal with a lot of assholes. It is the only
time I can remember not tipping, though occasionally, I've left 10
percent for bad service. A tip is is for service well-performed. I'm not
required to tip and if the service is crappy, they're lucky to still have
a job, never mind getting minimum wage.

I don't recall whether I complained or not, but I think I did mention
something on the way out, to the hostess in fact. That's when I found out
that the waitress quit.
Inroically, it was a place I spent a LOT of money in. In my drinking
days, my co-workers and I spent many nights there, often until closing!
In those three years, I probably spent two grand there. We worked in the
bulding next door!
