Can anyone help me with some technical information on the M6V 40/46 KBB
engine?
I cannot find the displacement , or any more information on this engine

And altso about a scene in Das boot , the enginers open something that looks
like cylinder vents on the engine ( it is running on high RPM's ) and blue
flames shoot out.

What purpose does it serv?

Haaken,
Cannot help you with the displacement of this engine, a web
search brings up various german websites which you can translate to
english using google, although you have proberly done that already.
You might be able to email someone in MAN B&W who may be able to point
you in the right direction.

The valves that where been opened where indeed the cylinder
indicator cocks(or valves), usualy these are used when starting the
engine for the first time after a stoppage of over and hour or so.
This is to indicate the presence of any water leakage into the
cylinder from a cracked cylinder liner etc.
They are also used when the engine is running to place a pressure
indicator(normaly just a pressure gauge on high speed engines) to
enable the engineer to balance the engine cylinder outputs.

Why they where openening them at sea may just to ensure that they
remain clear and not do not become blocked with carbon, or
alternativly it just looked good while filming.

hope that is useful
