About how maps are arranged on handheld (Oregon 550t)

I've been using my Oregon 550t for a few weeks now, and am finding it a
bit confusing how I am to arrange things on the device.
Is it possible to set folders that hold specific tracks, waypoints etc
so that only that folders contents are shown on the screen?
So far it appears that anything I have recorded is shown. Sort of all
or nothing.
Hopefully I'm just missing some functionality, but had a notion I
would be able to display a specific map of an area, and only those
tracks, waypoints etc that go with that map.
Since I've subscribed to the `Birdseye Satellite' service, I'd also
like to be able to display only the birdseye maps at times, and only
the topo map at others.
How can I do that, or is it even possible?
It appears, so far, that any Birdseye map I download is shown
superimposed over the default topo map.
