It's easy: run regedit, navigate to
[HKEY_LOCAL_MACHINE\SOFTWARE\Garmin\MapSource]
and delete the references to each of the maps you want to delete.
It is wise to export the branch before so you don't loose it in case
of errors.
Then delete the files on disk.

Jim,
after updating to the latest version I deleted the previous one via
"Add/remove programs" - no problem.
However, I am not sure if it is wise to delete the first set of maps
that I installed (full version). Perhaps someone else can answer this
question?

The shortest answer is doing.
Cooter and Michael have the right idea, the easiest way is using Windows
Add/Remove Programs from the Control Panel.
The first MapSource product you install will install MapSource and
you'll see both MapSource and also the mapping product (City Navigator,
U.S. Topo, etc.,) installed.
If you install another mapping product, or update an installed product
to a newer version, you'll see both versions in the list of installed
programs. Some retail mapping products will update MapSource to a later
version if they find you are running an earlier version, but I don't
recall a mapping update doing that.
If you only have a single MapSource product installed, and uninstall
that, it will also uninstall MapSource. You basically cannot have
MapSource installed without a mapping product.
Updates for MapSource can be downloaded from Garmin for free but the
initial installation has to be done from a retail product CD or DVD.

The nearest I can get to no mapping product is Trip and Waypoint Manager,
which does include some rudimentary mapping.

Yeah, that's not worth much if you have any other MapSource product.
I should amend what I said above a little. Garmin has a free software
that you can download and install called the Garmin Training Center:

I've heard that you can install that and then run the latest MapSource
update and you'll have a MapSource install without mapping. Or so I'm
told, I've not actually done it.
