Israel arose from the collapse of the Late Bronze Age. One of the two
populations comprising nascent Israel were pastoral nomads who could no
longer trade for the necessities they needed and so had to settle in
and farm for themselves. Those nomads preferred to work in the moon
light rather than endure the heat of the midday sun and so they
worshipped the moon god. One of their traditions was to sacrifice a
lamb to the moon god every spring and invite him to partake in the
meal. Which is why the Jews require it to be finished by dawn because
it's then that the moon god will be forced to leave, his light
overwhelmed by the sun.

The other population comprising early Israel were those from the cities
and towns near the coast who were forced to find land to farm in order
to survive. They had a similar tradition but it involved an offer of
grain to their gods and had to be eaten in the form the gods provided
it, hence the unleavened bread. Another of their traditions was to
sacrifice an animal before moving into a new house, smearing its blood
over the lintel and door frames to let the Grim Reaper know that a
death had occurred there recently so that he wouldn't be tempted to
return any time soon.

These pagan traditions continued down through the centuries and so the
Exodus authors converted them to honest Judaism by including an
acceptable reason for them in Exodus, much as they transformed Moses
from the Egyptian prince of legend to a Hebrew in Exodus 2.
