I actually made my own interpretation of the planets some time ago. see
below.
We already know that Sun and Moon are two children with no other future than
to be hunted until Ragnarök and eaten by the wolves.
If they, besides that, were to be interpreted as gods then I find this to be
appropriately symbolical.
Sun= Surt, alternately Frej or Frigga, both symbols of nourishing.
Moon= Heimdal, as a counterweight to Surt, alternately
Tyr, master of the heavens.
I see no point in, or at least prefer not to, directly translate the meaning
of the planets from roman astrology. Thus, my choices may perhaps be
somewhat surprising to some. Hence my clarifications have been added.
Mercury= Loke. Loke hides in the vicinity of the sun, making him hard to
recognize, keeping a low profile over the horizon.
Venus= Tor. The planet of thunderstorms.
Mars= Freja. I, for one, find this planet very intriguing.
Jupiter= Oden. This planet has one eye, representing the faraway,
allseeing and mighty Oden.
Saturn= Heimdal. Fringe guardian.
The Milky Way= Tyr.
'The polestar' in swedish (not a pole from Warzaw or a polevault-pole), a
bright star in Ursa Minor= Njord. Leading sailors over the oceans.
The outer planets cannot be seen by the eye so they ought not be of any
importance.

Question: Why Neptune for Helheim rather than Pluto, given the Roman
Pluto connection with the underworld and also the astrological Pluto's
connection with death and rebirth?
I'm curious to know what connections you have found with Neptune.

I didn't give the Roman connections or astrology a moment's thought.. I was
thinking in terms of the physical (and visual) characteristics of the
planets as they relate to the metaphysical characteristics of the nine
worlds. Don't take the whole thing too seriously, I whipped it up in about
10 minutes of inspiration, more as an exercise than anything else.

I used Pluto for Niflheim because of the obvious ice associations. That left
Uranus and Neptune for Helheim and Jotunheim. I divided them as I did
because Neptune seems to have a more 'restful' quality about it, whereas
Uranus strikes me as more dynamic, and due to its extreme polar tilt, at
cross-odds with the rest of the worlds.
In my worldview Ljosalfheim and Svartalfheim border and to some extent
overlap Midgard, so the nearest terrestrial planets seemed obvious choices.
Since Venus is the brightest of the planets (as seen from Earth) it made
sense to associate it with the light-alfs. And Mars just seems like the sort
of place where Dwarves would have a really groovy time.
I had to make similar choices with Jupiter and Saturn for Asgard and
Vanaheim. In the end I went with Saturn as Vanaheim because it looks so
pretty, and the amber hue made me think of Freyja. Someone else's list
suggested that Jupiter's great red spot brought to mind Odin's eye, and I
used that in selecting Jupiter for Asgard.
Earth as Midgard, Pluto as Niflheim and Mercury as Muspelheim seemed fairly
obvious to me right off the bat, because of the 'too hot, too cold, just
right'ness of them.
