You don't need the hyphen if you visualise a series of numbers, each
with some kind of facial feature and each of a different colour. Then
you have something belonging not to the green nosed three, but to the
black eyed one.

Not need, no, but I still think green-nosed and black-eyed would make
that easier (and thus quicker) to read.

It's not only the desirability (or otherwise) of an apostrophe that is
at issue, it's also its location.

Are we to contrast the black-eyed one with the green-nosed three, or the
black eyed-one with the red one who has no eyes?

The red numeral is six and it has no eyes but it does have an ear. The
one is black, and has an eye; the three is green, and has a nose.
However, for the sake of contrast, the green three's nose is yellow, the
red six's ear is purple, and the black eyed one's eye is puce. (Guess
he'd been celebrating early.)
