You have a number of options. The method I use is to never update except for
applying a full service pack, and only then after four weeks or so after the
release date. If you want trouble on your system, applying the regularly
fucked-up updates is a sure fire way of getting it.
If you feel that must update, then:
On a standard XP installation, Windows Update creates a WindowsUpdate
directory under Program Files. Set the Windows Update service to notify you
when updates are ready, and to notify you before it installs them.
When WU has downloaded the updates, there will be a directory under Windows
Update called wuaudnld.tmp. Keep a shortcut to that path on your desktop,
and when the download is complete, open wuaudnld.tmp and copy the out the
.cab files that have been downloaded in the cabs directory. Each patch has
its own .cab and resides in its own directory. This way, you can keep up to
date and archive the patches for later reinstallation if needed.
Two points to ponder... this only works for "Critical Updates and Service
Packs." If you visit the WU website and scan for updates _before_ you have
moved or copied the downloaded .cabs, WU will delete the ones that are
already there, even if you have not yet installed them, and you will have
to download them again.

You have to turn it on first.
To set Windows Update for downloading the updates for later installation
instead of installing now:
Go to Windows Update
Click on Personalize Windows Update (left column)
Click "Display the link to the Windows Update Catalog under See Also
Click Save Settings button.
When you're ready to download:
Go to Windows Update
Click Windows Update Catalog (left column)
Click on Find updates for Microsoft Windows operating systems (or, Find
driver updates for hardware devices)
Select your OS & click the Search button
Select what you want; Critical or Recommended
Select the downloads you want and go to the download basket.
