Anyone recommend a program that can monitor & display the comings &
goings on a web server in real-time?

i think you need to be a little more specific...if you want to see "the
comings" in and "goings" out, have a look at wireshark or if you just
wanna see the magnitude of the ins and outs, try iftop..

if you wanna see whats cooking on the box itself: try top, htop, atop,
iotop or similar..

i agree...

and, i know you know it is so very hard to guess what s/he wants to do..

so, at this point there are as many good answers as there are good
guesses about what is wanted/needed..

i can't recommend any particular one, because i have no idea what
(exactly) you wish to monitor!

do you want to monitor the volume of traffic in and out?
do you want to monitor the actual bits flowing in and out?
do you want to monitor the IPs of the folks contacting the site?

three questions (of dozenS) and each one has a different tool to answer.
