Very nice... I don't remember ever hearing that last verse, I clipped it and
saved it with my "Jambalaya". For the Cajun impaired among
us (my mama was an Arnold from Dry Prong, Louisiana) a pirogue
(pronounced "PEE-row") is a little boat. My 100% coon-a** cousin-by-marriage
pronounces billionaire, sometimes-politician Ross's last name the same way.

for the record:

spelling is Fontenot, a very common last name in Louisiana, though i
wouldn't be surprised to see the above spelling on sheet music.

the melody to this song is taken directly from "Big Texas", recorded by
Louisiana artists such as Al Terry and Chuck Guillory
before Hank wrote new lyrics and gave it a new title.

A Pirogue is a cajun flat-bottom boat.

Jambalya is a cajun dish somewhat like a stew.

Thibodeux and Fontaineaux are two common surnames in the Bayou country.

One additional "translation" "fillet (sic) gumbo" should be
file (with an accent on the "e") gumbo. File powder (a seasoning
made from powdered sassafrass is used to flavor gumbo & other
dishes.

A pirogue is a small boat propelled through the bayou by a pole stuck into
the mud. Jambalay is a rice dish often with chiken or sausage and, of
course, spices. Less often here in Louisiana, it is made with its
namesake, Jambon, or in english, ham. "Thibodaux", "Fontaineaux" (sic) are
common surnames in south Louisisana. The proper spelling of the latter is
Fontenot.
