The Evette is an older model made by Buffet, one of the well-reputed
clarinet makers. Buffet makes a complete line of instruments from beginner
through the highest grades of professional instruments. The Evette model
is an intermediate grade instrument equivalent to the current E-11. If in
good condition, it would be a fine instrument. Even if you have to get
corks and pads replaced it would be worth it.
Sapphire???? never heard of it. Personally, I'd stay away from it

I see that you're in the UK, so the most common brands available
secondhand are likey to be the Evette, the Boosey & Hawkes Regent, the
Yamaha range and the Buffet B12.
All are competent student instruments and will be fine - providing you
get one in good condition and at the right price.
Ignore the Sapphire, please!
Other makes to avoid include Earlham, Lark, Hsinghai and Corton
