can't help about the Xt/XTR debate, but re. the Avid/Shimano/Avid question:
I've got "cheap" Avids on my bike. And they are bloody brilliant.
I have to ask: just HOW "STOPPED" do you need to be?
If you're THAT desperate for an improvement, buy an anchor!
All the best,

XTR has bearings in many components (like brakes and shifters) where
XT does not. XTR is lighter. The rear derailleur is rapid rise (spring
assest upshift) with a rollamajig instead of a rear loop housing. The
rear cassette has titanium cogs. You get the idea. Basically the
engineers at Shimano are let loose to design an all out system which
ends up costing almost twice as much as the XT. In terms of what it
will deliver, well, if you are a racer looking for the little
advantage....its good. If you are a 40+ techno-DINK who loves gadgets
and has tons of cash....also go for it! If you are a student on a
budget, or a fat-ass or a bike courier....forget it.

Avid makes the machined parts. The lower priced stuff is made off-shore.
