Despite some people's belief, I am rather liguistically challenged as
far as Japanese is concerned. Anyway, what are the some good manga
which is relatively easy to read as well?
For example, I found UY and Ranma 1/2 quite difficult. But MI
was relatively easy.

Ranma1/2 difficult and MI easy??????? In terms of the difficulty of
language, MI should be more difficult than Ranma 1/2 for two reasons
at least: 1) dialog in MI conveys more ideas or emotion feelings than
Ranma1/2 2) Most of the stuff in Ranma1/2 are just fun for kids style
stuff. Many things can be understood just by watching the action part.
Moreover, there are more Kanji in MI and they have NO furigana with
them.

I can only think of two reasons why you'd think MI easier:
1) You know Chinese already and you can tell the kanji easily. With
background knowledge of MI, one can read them better than Ranma
2) You find the formal speech pattern in MI is just like what you
learn in your Japanese class (with those desu, gozaimasu there)

SInce you find kid's speech quite difficult, you might find manga
like KOR, Doraemon, Dragonball difficult too. CityHunter might be
"easier" for you in that sense. Actually what you need may be those
adult manga like SILENT SERVICE.
