Building the silly thing is straightforward. Programming it is where
there's room to get somewhat clever.
Note that you're talking about operating times on the order of
_days_ of continuous operation, so it's very much a last-ditch
and special-purpose tool. Useful to a professional safe tech
whose reputation is on the line, but most folks ought to just
hire an expert, and most locksmiths have better places to
invest that kind of cash.

Yep. There have been versions that have claimed to be able to do better
than that, at an order of magnitude higher costs; I'm unconvinced but
some folks swear they've seen one demonstrated.
A human expert can often do better. Not always.
I've been tempted just to order the mechanical part, throw together
appropriate interface circuitry, and write a program for a surplus PC
to drive it...
Note that electronic locks are essentially immune to this; as soon as
they detect an attempt to guess the combo, they shut down. You might
still be able to exhaustively dial combos, but at three attempts per
ten minutes or so, well... work it out for yourself.
