I have an old Zip100 external parallel drive. But, I've not got enough
parallel ports on my PC to go around for all my peripherals.
Is it possible to run my Zip100 through a USB-to-parallel adapter
successfully?

Most USB <-> Parallel adapters are designed to be used only with printers.

Quite true, they have a Centronics connection. Of course you could move
your printer to USB
OR buy one of those HUBS that adds a serial & parallel

Same problem with the hubs. The parallel ports on serial+parallel+USB hubs
are "printer only" ports, even though the serial ports will appear and
work as regular serial ports to Windows.
Most of the serial+parallel+USB hubs have a common OEM and driver
software; typically MCT (Magic Control Technology) of Taiwan.
The solution is to use the "real" parallel port for the Zip drive and put
the printer on the "printer only" USB parallel port, or get a USB Zip
drive.
