We've seen the small birds fly up, and cling to the side of the
wall, and peck at the brick. It appears as though they are eating
the grit that falls free.
A good number of the bricks have been defaced, and as much as a 1/2
inch has been pecked away. In each of our homes, it only happens in
a small area near the front door.
Has anybody ever heard of this? Do you know why the birds are doing
it? And do you have any suggestions for preventing further damage (is
there anything we can spray on the brick to make it less attractive to
the birds?)

Sharpening their beaks, maybe? I wouldn't think eating the brick itself
would be very good for them.
Never heard of that one before. If the afflicted area is small, maybe a
clear glue or resin would work to hold the brick face together and prevent
the little buggers from penetrating it, or lose interest in it. As usual,
if you do something like this, try it on a small out of the way part and see
what it looks like before slathering anything on a visible section of the
wall.

I understand that it is not unusual for birds to swallow grit or small
pebbles. Apparently,(since they have no teeth) it aids them in
processing their food.
