You would need new post holes and bushing; I can't see any advantage. You
need to choose the bridge to suit whether you use a plain or wound third
string, or get one that allows independent adjustment of the third string -
eg the Badass copy. I would go for this with a wound 3rd:

Or this with a plain third:

Look at the difference in the intonation offset for the 3rd string.

The conversion I have thought about is Gibson style to string-through
hardtail strat. It seems like a more solid system with potentially better
(not necessarily realised) sustain and tone.

Only if your Les Paul has a wrap-around bridge already.

If so, then yes. If not, then no.

Better off buying a Melody Maker or a LP jr.

It is possible, but it takes a bit of modification. The TOM holes have to be
filled, as do the holes for the existing stop tail piece (assuming your
guitar is Gibson style). Then new holes have to be drilled for the
wraparound, and bushings inserted. Generally, then some refinishing is done
to cover up the woodworking.

I really love wraparound guitars - I have 4 of them. But I am not sure I
would ever do this sort of mod to one of my TOM guitars. If I really didn't
like the TOM, I would probably sell the guitar, and buy something else.

...never had one that scratched my palm.

I can see the thing about wrapping strings over the tail piece, but a
wrap around bridge? Whatcha gonna do with the two extra post-holes?

As the history of Gibson goes, their original electrics used the wrap around
bridge (ala the goldtop LP and the LP Jr for two examples). The tuneomatic
bridge was an advancement which greatly improved intonation. Going backwards
in intonation vs "palm scatching" seems counter-productive to me. Perhaps
read this before making this decision:

But looking over the ad on the bridges he wants to use, they say they
are adjustable for intonation...though I can't figure out just how from
the pictures. Well...I guess I can sorta see...

I've never had a "scratchy" one...and I still wanna know what he plans
to do with the extra holes.

As they say, anything's possible. What's necessary is the ability to pay
for it.

If by Les Paul Bridge you mean a Tunamatic (TOM) and Stop Tailpiece
combination, the TOM has to be removed, the mounting stud holes filled, then
redrilled for the wraparound studs.

Obviously, this leaves empty tailpiece stud holes on the top and visible
plugs from the original bridge mounts. And it will likely cost over $100
in labour.

If you're finding the bridge uncomfortable, simply replace it with one that
has fewer sharp corners. For example, this Stew-Mac roller bridge might
pop right on, and require no other modification to the guitar. I have one
of these on my Gretsch 5125 and Epiphone WildKat, and in fact found it much
more comfortable than the original TOM.

http://www.stewmac.com/shop/Bridges,_tailpieces/Electric_guitar,_Tune-o-matic_bridges/Locking_Roller_Bridge.html

It's item 5276 in Chrome

Also, it has more mass than the standard TOM bridges and can improve tone
somewhat.

If that's your goal, you can almost certainly reach it quickly and
inexpensively by simply installing this part:
http://www.stewmac.com/shop/Bridges,_tailpieces/Electric_guitar,_Tune-o-matic_bridges/Locking_Roller_Bridge.html

Part number is 5276 for Chrome.

The bridge body is rounded, as are the saddles, so it's quite comfortable
when palm-muting.
