MANY years ago I went to Hong Kong several times to buy equipment
(lived in Taiwan), there were two main places to purchase (the deals were
great.) I believe they were Tsong Fook (sp.) and Tom (?) Lee music stores,
a few outlets for each. If I remember they were on Kowloon.
They're called Tsang Fook and Tom Lee (The two main guitar stores in
HK).
Tsang Fook Music City (main):
1-2/F, Chun Yip Bldg, Cheung Sha Wan, Kowloon
Tom Lee:
Kowloon Main: 1-9, Cameron Lane, Tsimshatsui
Hongkong Island Main: City Centre Bldg, 144-149 Gloucester Rd,
Wanchai
If you want to buy Japanese/Korean gears, I think Tsang Fook Music
City would be the best store for you. Tom Lee does not have so many
Japanese/Korean products.
Another stores (they're worth to visit!!):
Nelson: Hak Po Street, Kowloon (close to the Mongkok KCR station)
Shinseido: Ma On Sha Centre, Ma On Sha, Shatin, N.T.

I've only been in HKG for 9 months, and this is what I've found:
Tom Lee Music.
Fender & Gibson sole dealers for HKG. Also stock Charvel, Jackson,
Godin, Aria, Ovation, Yamaha, Gretch, PRS, Briam Moore, Steinberger
(Look, these guys have most of the Fender & Gibson custom shop output
examples on display!) I cannot fault their stock levels. Service, Set-up
& deals, well... You'll probably get 5% knocked off the tag price if you
ask for it.
Amps: Fender, Marshall, Trace Elliot, Vox, etc
FX Zoom, Sansamp, Dod, Boss, etc
Their main store is on Cameron Lane (off Cameron Road). Tsim Tsa Tsui,
Kowloon (TST MTR Station, take the Cameron Rd exit. There's a small Tom
Lee branch on your right about 20 yards after you leave the MTR exit,
shortly after this Cameron Lane is on your left).
Tsang Fook Piano Co. (3/F Loyal Bldg. Cheung Sha Wan Road, Lai Chi Kok,
Kowloon)
They have a pretty good Ibanez & Hamer line. However they just moved
stores to Lai Choi Kok, and I've not managed to find them yet!
Nelson Piano Co. (91 Hak Po Street, Mongkok, Kowloon)
Mongkok MTR station. Take the Argyle Street exit. Follow Argyle Street
Northbound (you should see a KCR Railway bridge in the distance), Hak Po
St is about 4th street on the right). Turn right into Hak Po St, Nelson
are on the LHS.
This tiny store is a treasure trove. ESP ,Fernandes, and Ibanez guitars
by the ton. Mostly pointy headstock stuff, at knocked down prizes. They
also have Roger Mayer effects, Dod, & some rack mount stuff.
There are a couple of other stores kicking around, but they tend to
stock either purely orchestral stuff, or Taiwan/mainland made cheapies
(ugh!).
My advice is to buy a Street map!
