You want spot colour separations. Assign each colour a Pantone colour from
the Pantone Solid Colour swatch. Then print separations as before. This
should separate all your colours as needed.
White as a spot color???????

Ow right missed that, silk screen, yep it is possible to print white.
And I even remember an off set printer succeeded to print white on off
white paper, just to make the black and white photo come out better. How
he did that I cannot say. He called it "dekwit" "covering white".

There is opaque white for offset. It's not *that* opaque. Still; you can get
neat effects with it. Or it can be laid down as a base to print another
colour over top of it. This helps for slightly more accurate colour, when
printing coloured ink on coloured paper for example. Or sometime you can
just lay down 2 hits of the white and call the colour half assed white!

White ink als exists in flexo printing (plastic bags e.g.). We use it
to print on transparant material and other purposes
