If I have created a symbol in illustrator how can I just export
the symbol to photoshop without exporting the whole canvas?

Select the symbol.
Copy it. ( cmd/cntl c)
open a new document
paste the symbol. (cmd/cntl v)
Now export it
Copy it. ( cmd/cntl c)
open a new document
paste the symbol. (cmd/cntl v)
Now export it
