PDF printing in Illustrator

I was just wondering what the correct method of publishing a PDF document
for Press documents. I have been going via the print dialog and choosing the
complete image file and the complete font file, the bleeds and my files have
all been small... but I though that that was fine.
I then went through the setup button and realized that all my pdf's were set
at standard and not at press.
I changed it to press and my files are now all bigger and sharper...
Are they unnecsearily bigger? A client of mine mentioned that the business
card that he got from the printer was fuzzy. I had no idea why - I bought
the bitmapped image and it was set to 300dpi.
Should I always be checking what the printer driver setup is always set to??
Making sure it is set to Press for Press and Print for Print and email for
email?

Job Options. You can make your own. Make sure the necesaary fonts are
included and finish that little wizard. You can make several Job
Options. And yes then just choose "Press" when it is needed for press etcetera.
The fuzzyness is most of the time just the way the software puts it on
screen. But you have to make sure the Settings and the Job Options are
OK. Make one you like for each (web, print, press), make a special one
for special stuff, like really high res, if your computer is fast enough
let it load in all the fonts, so you are sure.
Best way is to send a proof in PDF over to the printing office and let
them check it. But you always have the Certified PDF option.

I use www.ddap.org for my specifications when preparing PDF files for
publications.
They have instructions and Distiller options.
The files tend to be large because the settings use lossless compression
but when I need it a little smaller I use the provided PDF/x-1a option
with Disiller. This uses the JPEG compression but at the maximum quality.
I have had good feedback from publicaitons on these methods.
