I am looking to purchase the HP DesignJet 500 (24inch wide) printer in
order to print onto canvas loads of art I have produced in Adobe
Illustrator.
I noticed that the printer comes in two versions, one with Postscript
and one without (which is cheaper).
Could you please tell me whether or not the Postscript version of the
printer would produce better results, keeping in mind I intend in to
use the printer solely for printing colours images from Illustrator (ai
files)

In the old days only Illustrator was capable to print to a
non-postscript printer. I believe those days are gone. You
really need a Postscript driven printer, there are
simulators out there that can do the trick. But in your case
I would put in the money. In the long run you will be much
happier, also if you are gonna use other software like
InDesign or Photoshop.
It is not a question of better or worse, but will it work at
all if it is not Postscript. I have my doubts.

I have a 6 month old printer and it is not a postscript printer and I print
using Illustrator 9 all the time to that printer.
Mac printer software gives you the option to use whatever printer you happen
to have.
