What interrupts are available to each class/spec? I'd like to fill in this

Interrupts only, or any effect that can stop a spellcast (fear stun etc)?

(Off the top of my head)

Interrupts only:

Warrior - Pummel
Rogue - Kick
Shaman - Wind Shear
Paladin - Rebuke
Priest - Silence (shadow talent)
Death Knight - Mind Freeze (DKs also get Strangulate which will interrupt
mobs but not players -- I think?)
Mage - Counterspell
Hunter - Silencing Shot (marksmanship talent)
Druid - Bash, Skull Bash (feral talent)
Warlock - Spell Lock (Felhunter pet ability)

In addition, any fear / stun / knockback / disorient / etc will interrupt a
spellcast. There are a lot of these abilities.

I remember reading about the Shaman's Wind Shear having a longer
cooldown for all but enhancement spec.

Other than that I can't recall any other changes

Cool - It'd be nice if while your updating that page, you add the CD for
each...The rogue can almost constantly kick, while the mage's
counterspell is a 28 second CD before it can be used again. It's a good
reference for players not as familiar with other classes what the
interrupt capabilities are... :)

Correction: Skull Bash is technically available to all druids
(although only usable in bear/cat) but has a 1 min cd, ferals can
talent it down to 10 sec which makes it actually useful! Bash is a
stun which *used* to interrupt if the target was immune to stuns,
however I believe this feature has been removed, certainly wowpedia
suggests it was changed in 4.0.1 and there's no suggestion of it in
the tooltip any more, nor have I noticed it interrupting anything for
quite some time.

I theory you can interrupt with Pounce, but since it has to come
from stealth, it's not likely to be a factor very often.

Yes, maim can interrupt in much the same way too, I was just referring
to specific interrupts rather than stuns/disorients, which vastly
increases the number of possible spells! :-)

What happened to the shield smash I used to use? Sucks that a tank has to
switch to berzerker stance to interrupt.

I don't mind adding additional stuff. The idea is to enumerate what it
takes to get that boss or spell caster to not do his thing.

You don't have to switch stances. They made Pummel usable in all stances
and removed Shield Bash.

You'll have to treat bosses and regular mobs differently, as bosses are
almost always immune to stun/fear/knockback/etc.

In patch 4.1, Shield Bash was removed from the game. Pummel was
made usable in all stances. The spell reflect effect was removed
from the game, and was replaced with making Shield Block able to
resist magic effects.

Spell Reflect is still in the game.

The Shield Mastery talent reduces your magical damage taken while Shield
Block is active; perhaps you were thinking of that?

I've been in groups where the tank was taking grief for not interrupting
some bad boss ability, so I wanted to make sure when I resume tanking that
I know which abilities are available to which tank classes. Plus, it's good
to know for my healer and DPS classes for when the tank does miss the
interrupt or the boss resists it.

In patch 4.1, they changed many interrupts to always hit:

* All non-damaging interrupts off the global cooldown will now
always hit the target. This includes Pummel, Shield Bash, Kick, Mind
Freeze, Rebuke, Skull Bash, Counterspell, Wind Shear, Solar Beam,
Silencing Shot, and related player pet abilities.
