The game says "use LS to keep your balance."
My question is...what exactly am I supposed to be doing? Trying to wiggle
the stick left/right doesn't do anything and next thing I know, I've
literally turned to the left, stepped off, and start falling to my death.
Again.
I tried this for about 10 minutes before quitting.
What am I doing wrong? Obviously if I can't master the tutorial, there's
no way I'm going to ever bother with the full game.

It's not broken. It's...advanced.
I only did it once but I'm fairly sure the trick was to keep pushing
forward and slowly rotate the stick in the opposite direction the view
is banking towards.

Yeah, this is how I did it. You have to be pushing forward while
adjusting left and right, sort of at a 45 degree direction with the
LS. You probably will want to avoid pushing the LS perpendicular to
your TV screen which would set it to about 90 degrees to the forward
direction.
You just roll the control stick back and forth between NW and NE
rather than going full on W and E (if you imagine the control stick as
a compass).
The Playstation 3 allows you to use the SixAxis functionality to
control balance which is a LOT easier.
I downloaded the PS3 version (came out first) and although I gave it a
shot with the SixAxis for some reason, I'm so glad they made it
optional. I remember how annoying I found it in Drake's Fortune.
Basically you just push up on the stick to walk forward across the
beam. Then if you look ever so slightly left or right you can see your
arms sticking out, and if either one of your arms start to dip towards
the ground then you just lean slightly left or right on the stick in
the opposite direction to balance yourself. Works like a charm.
Still, it was one of the parts of the demo that I didn't like, mainly
because the controls weren't as intuitive as with the rest of the
athletic feats. I also didn't like that when I jumped off the building
to try and time it so I landed on a moving vehicle so something cool
would happen, that it didn't. No big deal though. The rest of the game
is spectacular and I can't wait to put some real time into this one.
Its a lot better implemented than in Drakes though.
