How can I allow more than 4 players...?

I am considering setting up a simple Quake 1 server on a LAN and I was
wondering the console command which allows more than 4 players to play
in the deathmatch.

In your config file, put this

set maxclients 16

or whatever number you want.

In Quake II it's:

maxclients <number>

Then it says "maxclients will be changed for the next game"
Then you have to type:

newgame

Of course this doesn't always work for some reason (I don't know why) try it
and find out.
(By the way, if you want to run a mod try typing "game <foldername>" where
foldername is the name of the mod)

In q2 you can also set it when you are setting up your server. (Yes I know
you said Quake I)

I thought for Quake 1 it was "-listen (#)" for the number of clients to
connect?? Anyone remember??

You are almost correct. To allow more than 4 players you have to start quake
from a command line like this : quake.exe -listen 8

Don't forget that with -listen n, you're setting up a non-dedicated Quake
server, which will be unfair to every machine except the server.
Try -dedicated n instead, which will just display a text-based console,
resulting in faster and fairer gameplay for all. A 486 works fine for this,
I've tried it numerous times and there's even something about using a 486 in
the Quake docs.
