What's the trick? Do they inflict some particular "flavour" of damage,
such as Fire, that I can make my character resistant against?
More generally, what's a good "I'm in combat now" item enchantment to
create? I used to just have Heal 3-4 HP every second for 20 seconds, in
an item, and that was plenty for my needs, but now I'm level 10, and
that's not cutting it any more.
I could increase to 8-10 HP/sec, maybe, but I think something more needs
to be put on top of that. A second enchantment. What's good to use?
Shield? Something else?
I get knocked down a lot, because I have fairly low AGI (during
character creation, I craved INT, STR, WIL and even a bit of CON, so
IIRC I'm still AGI 25). I believe AGI helps against knock-down, but I
would probably need to boost AGI quite a bit to get any effect, right?
Rather more than I can do now, when all I have is Ancestral Ghost
soulgems with a market (gold) value of 4000.

Bonelords at higher levels will put a permanent (until restored) drain
on your strength and endurance. So learn the restore endurance and
restore strength spells. Maybe have a ring enchanted to restore these
traits also.
Once your agility gets up around 50, you will not be knocked down very
much....and at 70 will hardly ever be knocked down. Practice sneaking
or other agility-boosting skills a lot for some of your level ups so
you can get a few good agility multipliers.

Not particularly. They have a Grave Curse, which will damage your
Speed. There are others which can damage Endurance and Strength as
well.
The main thing is that they're immune to normal weapons, and resist
shock, cold and poison, so fire is the thing to use against them, like
most undead.

I don't really bother with those, because your self-made restore
health potions work in just that way. Why bother with an enchantment
to do what a potion can just as easily?

I wouldn't try to use spells or enchantments for health restoration
until you get constant effect enchantments. Until then, drinking a
couple of restore health/stamina potions before or during each fight
will do you more good.
Shield adds to your armour class, so is only useful against physical
attacks, while Sanctuary adds a miss chance to the enemies normal
attack, and is thus useless against spells.
Fire Shield, Frost Shield and Shock Shield are all more useful than
the plain Shield, because they add the same armour class for about the
same cost, while also adding retaliatory damage of the appropriate
elemental type. Shock Shield is particularly useful because so few
enemies resist shock damage.
Resist Fire/Frost/Shock/Poison all have an obvious combat usefulness,
so long as your enemies are using the appropriate effect.
Resist Magic doesn't affect elemental attacks, but resists effects
like the attribute damage that many higher-level enemies put out.
Spell Absorption works on all types of spells, so long as you have
less mana than your maximum, but it's hard to get to a useful level.
Reflect is better still, if you can get it.
The best enchantment to put on a weapon if your skills aren't high yet
is bound weapon, cast on attack, of the same weapon type. The bound
weapon you get is much better quality than anything you'd be using
until you get up to glass/ebony levels, and it enhances your weapon
skills while you're using it, while also reducing wear and tear on
your enchanted weapon.

If I was going to invest in stat-boosting enchantments, I'd go for
Luck because of its universal usefulness. For the purpose of all skill
checks, 10 points of luck = 1 extra point of whatever attribute is
being tested, amd it also inceases your odds of better item drops.
Also, use weapons made of superior materials. Normal unenchanted iron and
steel won't work. Silver, on the other hand, works a treat against undeads.
Daedric weapons work very well, which probably implies that Ebony weapons
also work. I don't know about Glass or Adamantium weapons. An enchanted
weapon should work. I think undeads may be actually immune to poison, rather
than just resistant. But, as said above, fire is always good against
undeads.

I originally had a steel one-handed sword, which was enchanted with a
100 charge soulgem, and sent off a Frost Damage spell for 12-13 damage
on each hit, costing 4 charges, so that it could fire 25 times in a row
before needing to recharge.
Now I've replaced it with another steel one-handed sword, but this time
with a 200 charge soulgem (IIRC from a Skeletal Champion - those are
nice!), and the spell does 11-12 pure damage (i.e. damage that can't be
resisted) on each hit, costing 4 charges, thus able to "work 50 times in
a row before needing recharge.
(In hindsight, I should probably have gone for somewhat lower damage, I
think, so as to enable the sword to "work" 67 times before needing
recharge. But I'll look into that with my next weapon, when the time comes.)
This new sword works much better (I now eat Bonelords for breakfast, and
Skeletal Champions for desert!), but I was surprised to find that a
"pure damage" spell wasn't much more expensive than a "frost damage"
spell, whereas in fact it seems to be only about 10% more expensive.
I have yet to find any weapons not made of iron, silver or steel. Are
there shops where I can purchase something daedric or dwarven or ebonoy,
or similar? I've got a bunch of money.

There are some deadric/dwarven/ebony weapons in the game from the
beginning, but most of these come as "leveled loot/weapons" on enemies
you kill. Dremora lords--which you will encounter near or in deadric
ruins--tend to carry dwarven then ebony and daedric weapons. These
dremora lords start showing up when the character has a high enough
level (maybe 12 or 15?).
There is a daedric katana that is a quest item in Mournhold in the
Great Bazaar (but saying more might ruin the quest). There is a Sword
of White Woe that belongs to a Hlaalu guard that is lying around in a
watch tower in Balmora (but you have to steal it and have to be decent
at that or you will get caught). People have said there is a daedric
or was it ebony sword on the Odai Plateau, but I have never seen it.
Some of the vampire clans that live up on the Foyoda north of Maar Gan
(the one that runs just west of the Urshakula (sp?) camp have ebony
armor and glass armor--and may have weapons to match (I do not
recall). There is a dwarven spear lying around for the taking in the
Dwemer ruin near Fort Monmooth (near where you find the Puzzle Box).
There is another very nice Night-Eye-enchanted dwemer spear that is,
if I recall correctly, in the Dwemer ruin that the Fighters Guild
sends you to out of Sadrth Mora (N-mumble). There is that guy with
ebony armor deep in the daedric ruin near Ald Velothi that has
comparable weapons (but the weapons might be leveled, I am not sure).
There is an abundance of higher level weapons and armor in Ald Sotha
(somewaht NE of Vivec), but you have to fight for it. Some nice stuff
is always there; some is leveled.
For a beginning character, you can go to Ra'Virr's in Balmora and
buy one of his "daedric" weapons that produced a Bound Weapon. This
is an excellent way for a low level character to obtain the power of a
daedric weapon. Wayne, the Fighter's Guild smith, also sells a nice
Dwemer short sword that is enchanted with paralyze.
If you are not encountering ebony, dwarven and deadric weapons, your
character is probably still a little too low to trigger them.

"a bunch of money" relative to the cost of low-level weapons probably
isn't so much when you consider the increased cost of better
materials. For instance, consider the cost vs materials for axes:
Chitin War Axe - 19
Iron War Axe - 30
Steel War Axe - 60
Silver War Axe - 120
Dwemer War Axe - 450
Glass War Axe - 12000
Ebony War Axe - 15000
Daedric War Axe - 30000

Some of them in daedric ruins are placed rather than random, so even
at low levels it may be possible to get a dwarven weapon from one, if
of course you can kill it.

It's a wakizashi, not a katana. This means it's the best Short Blade
skill weapon in the default game that's easy to get.

There's also one of these in a guard tower in Suran, I believe. It's
harder to steal than the one in Balmora, though.

It's an ebony shortsword, and it's almost impossible to get unless you
use the TWF command to turn off textures, because it's buried so
deeply in the ground that you'll never spot it by accident. If you
really want to find it, it's beside some boulders on the higher
southern part of the plateau, near the exit to the swamp side.

There is a smith under one of the towers of Ghostgate who will always
have some glass armour and weapons, but it's far too expensive for a
low-level character to afford. One of the pawnbrokers in Suran always
has a very badly damaged glass dagger that's extremely cheap, if you
can repair it. Other shops in Suran have glass throwing knives and
ebony darts, but these are far too expensive to be practical given how
often you lose thrown weapons. The smith in the Balmora Fighters Guild
usually has some normal dwemer shortswords, as well as the enchanted
ones.
In general, the placed weapons that are both good materials and easy
to get seem to be biased towards short blades for some reason.
It is also possible for a first level character to get a Daedric Katana
in Vivec as a reward for a quest, but it requires knowledge the
character would not have.
I have several hundred thousand gold pieces. Enough to not think twice
about buying the soulgem with the Golden Saint soul in it, from the
enchantress (Edwina?) in the Balmora Mage's Guild. I've made a fortune
selling soulgems with Skeletan Champion souls in them, and vampire dust,
and also earlier in the game smaller soulgems worth 3000 to 4000 gold each.
I haven't played much this last week or so (I've resumed subscribing to
EVE On-Line), but IIRC my character is level 11 or maybe 12, so weapons
of interesting weapons should hopefully soon begin dropping as loot.
So far, I've had nothing better than silver weapons, though.
Another question: Do dungeons re-stock with monsters immediately upon me
leaving them? I've always assumed that it took them a couple of months
to re-spawn monsters, but an experience last month suggested to me that
maybe that isn't the case.
If dungeons do respawn monsters ASAP, that's an excellent farming
opportunity...

That depends on what you did with the defeated enemies.

They respawn more slowly if you leave the bodies than if you remove
them. When you save games, 'removed' creatures are not saved at all,
and so can respawn instantly next time you load.

Did you use TWF? It's totally invisible without that, even if you know
exactly where to look.
