Accually you can't change such things withouth morphing items players
are currently using. Besides, it is noce some items are really rare :)
There was a post some time agot on HoS hunting. Where to find it and
such. I think the main points were:
*Helm has a level 8
*The Unique item in it self has a level of 1
*There is another unique helm of level 7 (overlords helm)
*If you a unique item of a special type the best one (highest level)
is always choosen (in multiplayer)
With helm I mean the specific helm type "helm" not helms in general.
So:
The monsters has to be of level 8 or above to drop a helm. But it has
to be below level 7 to not drop the Overlords helm. Fortunately for
the determination of the base item heml, the bonus of difficulty to
the monsters level is accounted for. Thus we can have the following
conclusions:
*It can't be found on normal difficulty level as asny monster that
could drop the helm would if it is unique drop the Overlords helm
instead
*On nightmare and hell any monster whos base level is below 7 can drop
it.
*Normal monsters have a probability of 1% to drop uniques and thus any
of the monster with a level below 7 can drop it but very rarely.
Unique monsters have a +4 level bonus when it comes to determining
type of uniques and thus can't be of higher level than 2 (or they will
be above 7) and there exists as far as I know no such uniques. So
normal monsters are the only option.
*Playing on hell slightly decreases the chance for the helm as
monsters there due to +30 in level instead of +15 have a lot more base
items to choose from.
*Puting all together, it is a very rare item that is only found in
church from normal monsters (and possibly from chests and so too).
Well, that.s it. I might have forgot something or made som errors but
generally I think it shoul be correct.

H'mm, I haven't found that one yet, but I just checked it in Pedro's Guide.
It looks nice, but +10 light radius? The Veil of Steel looks nicer to me,
but, again, it is available only in SP. Maybe this is why I like playing
single so much. Most of my characters have both the Veil and the Undead
Crown (well, not my sorceror, I think he sold his Crown) and most of the
ones who don't are still trying to get one or the other.

As i did understand your explanation, if the overlord's helm is not
generated to be dropped, the HoS would be the highest one the butcher could
drop.

Yes, but the Overlords helm WILL get droped if that monster can drop
it. Otherwise it will drop the HoS as you say.

The Helm of Sprits is almost as good an available in multiplayer
although rare.
