Any thoughts on the best way to destroy them?

Kill the dogs outside the keep by the drawbridge and grab all the meat they
drop. Then go to the stove inside the keep (by the stairs iirc) and cook the
meat (have to click multiple times). Once you have the stew slip past
(potion of invisibility or stealth) the "uber hulks" and go down to their
feeding pit (hard to miss). Once you put the dog stew in their feeding pit
you don't have to fight them at all.
And now that you got all the umber hulks in a tight corridor, move a mage
and one other character near the door on the left. Mage casts cloudkill, and
the other character closes the door as soon as the cloud moves past the
door.
Two cloudkill should kill them all, and one cloudkill will weaken them a lot
so you can easily defeat them.
Nalia has cloudkill when you first meet her.

Umber Hulks are mean, nasty, ugly beasts that not only can rip your
mortal flesh to shreds with their powerful pinchers and mandibles, but
even worse they cast Confusion causing you to become helpless!
I've always taken Jaheira with me on this quest so I get her to cast
Chaotic Commands on my toughest fighter, Minsc. That makes him immune
to Confusion, among other things.
Also, I've usually taken Nalia, and she comes initially with the
Cloudkill spell in her spellbook. Read the description. Cloudkill
auto-kills low level monsters automatically, and Umber Hulks fall into
that class.
So my strategy is to have Minsc charge straight into the room, and the
Umber Hulks converge on him while Nalia walks up from the rear and
Cloudkills the room. Minsc then flees the Cloudkill area, because it
does a lot of damage each round in addition to the auto kill.
If I don't have Cloudkill, I turn off AI and have one or two fighters
with Chaotic Commands cast on them go and draw the Umber Hulks out of
their room by entering it then doing a fighting withdrawl. Everyone
else stands back and attacks with spells and missiles. Focus on one
Hulk at a time: they don't have a lot of hit points but you have to
take them down fast because they chew through your fighters very fast.
There is a thing in AD&D: a monster with 1 hit point left still has
the same attack and damage as one with full hit points, so in general
it is best to focus on one monster at a time until it is dead then
move to the next one.

Wish I had read this lot months ago. I spent hours reloading as I kept
hacking away with brute force. Got there eventually, persistence pays. Dae
richt, feare nocht! Safe oot and safe in.
I'm not much better. IIRC, I did the let one through and slam the door
technique. Wait until everyone is done being confused. Heal up, and
do another. Don't know what I would have done if monsters could open
doors.

LOL. Sometimes knowing the game AI is thick as planks is a winner :-)

confused / charmed / dominated!
If you know you're going to be confused / charmed / dominated but don't have
protection gears and spells available, shut the doors - It'll prevent your
characters wandering into more foes in unexplored areas.
Absolutely. In addition, switching off the AI is the first thing I do on any
infinity engine game. I think that the ability to control all the party
members is one of the best features of the game, but it's not a good idea to
rely on the AI! I was surprised, off-topic, that Neverwinter Nights took
this away - the number of times my henchman has stood like a statue when I'm
trying to get him to follow or attack....
Excerpt from Phaenar's Rules:
Always give the Helm of Charm Protection to the fighter wielding the Vorpal Weapon.
IIRC that's not good enough... as Helm of Charm Protection provides
protection from lower level spells (Charm Person) only. It does not protect
against Domination.
Thankfully, you're wrong. ;-)
Helm of Charm Protection protects against anything that
will outline the character portrait red.
I've got a question about domination.
I don't know if I've just been unlucky or simply have a bad
memory but can anyone say definitively that vampires, when
characters who have charm protection and characters who
don't have charm protection are both in their sight will *ever*
target the ones who have charm protection with domination?
The only times I can recall a charm protected member targeted
with domination is when only charm protected members were
in the vampire's sight.
But then again, you're right, too - Chaos is the one to watch for.

The beholders, for contrast, and IIRC the readme, will target
target someone holding the shield of balduran just as they would
anyone else for a round or two or whatever and then switch off
to someone else. Much better.
Oh well, it's not like I don't employ similarly smart tactical
approaches at times. I probably shouldn't complain. ;-)
