When we rest, she no longer memorises spells, even though they show as
memorised in her mage book.
Any ideas?

Remove her armor.
REMOVE her frigging armor man. Please read the portion about mages in
the manual.
Mages can't cast spells while wearing armor unless you get hold of some
elven chainmail.
About the fighter level-up; If you're playing the game at the
difficulty-level "Core rules" i.e. True D&D rules, you could try lowering
the difficulty-level one notch. This will have the effect that each time you
level up someone they gain maximum hitpoints possible. If the problem still
persists, is the fighter multi-class? If so, keep in mind that when
levelling up multi-class the hitpoints are divided with as many classes as
the person has.
For example, A fighter/mage has gained enough XP to level up the
fighter-class. The person does not have any HP-modifiers which means that
the maximum HP the fighter can get is 10 (One d10). Now since he also is a
mage these maximum HP will be divided in two, let's say he gets a roll of
10, that would mean that he actually only gets 5.
Another possible explanation is that the fighter has reached level 10. Then
he only gets 3 HP per level-up.
