The easiest way to beat them is don't activate them to start with. If
you're detecting and disarming the traps in the initial corridor,
they'll never spawn in at all. When going after Daveorn, scatter your
guys and keep hitting him with everything, magic, ranged weapons,
melee weapons when you can catch up with him. When he finally
runs out of dim doors, he's down to just a staff, and then he's cake.

Cast Dispel Magic on them. Backstab (hit-run-repeat).

Is backstabbing a special ability or something? I've noticed references to
it in the ability tables for Coran and Imoen but don't exactly know what it
is or how to use it.
Secondly, how the hell do you disarm traps? There is no reference to this
in the manual, just detection.
I did this part of the game without knowing any of the above (only after
reloading several times though because those horrors are right bastards!)
and found that Davaeorn was a piece of piss, it was just the horrors that
caused me a bit of a problem.
I cast dispel magic right in front of him before I could even see him on the
screen and then flung in a couple of potions of explosions/fiery burning
then used acid arrows and a whole heap of magic on the horrors (summoned
animals and skeletons to keep them busy). When they were disposed of I
finished off Davaeorn with one more spell and some arrows for good measure.
Took a while but I got there in the end.
The only problem I had after that was carrying away all the goodies that I
found in his cupboards and chests!

It's a thief ability. It works like this:
IF you manage to hide in shadows and then walks *behind* an opponent, and is
wearing a weapon you can use for it (all daggers and all swords except
bastard and two-handed (eventually some other weapons work too)) then attack
the guy, your character makes a backstabbing attempt.

Detect the trap, then click on the "use thief ability" icon at the bottom of
the screen, then click on the detected trap (the red area).

Works good to me, and to be honest, I'm sick & tired of dragging those
damned potions and scrolls and wands. I use 'em ASAP. I'm constantly
boosted, I tells ya'!!
As for the Horrors in the mines, I preferred to detect the 2 traps, and step
on them one at a time (it doesn't work while Invisible, BTW), so I could net
that extra, what... Is that 4000 xp??? Twice????

punch you, resulting in reduced damage for you. Plus, they can't even kill
you - they'll just knock you unconscious.
