Should you have killed them? In a moral sense- no. Killing is not a good
thing to do. Good people generally only kill others when they absolutely have
to. Since you probably have little or no motivation to kill the above
mentioned characters, it would be quite immoral to do so. Of course, you might
have your reasons. Perhaps you have an unrelenting hatred for all mages, and
you absolutely must kill them all to satisfy your need for vengeance against
spellcasters. Or maybe you're playing the game as a murderous bastard. If
this is true, then yes, you should have killed them. Although they might be
difficult to slay- killing such powerful and good characters is a great
accomplishment for any person of evil persuasion.

You can do it. Elminster is not all that difficult of an opponent to defeat,
once you know the proper method. He might not be scripted to attack, and he
may be immune to damage in his normal form, but he is most certainly not
invincible.
can you be anymore vague?

I presume you mean in the catacombs under Candlekeep? Most of the time
I cannot avoid killing them, but I once succeeded in letting one of
them live. They give good experience, though...

SPOILER- KILLING ELMINSTER!!!!
Elminster of Shadowdale, all-powerful archmage and immortal chosen of Mystra,
as he appears in Baldur's Gate, is most certainly not invincible. So, if you
are playing as an evil, diabolical character, here is how to kill the goodly
old man.
First, you need some way to make him NOT Elminster anymore. Elminster himself
cannot be hurt by anything. But whatever magical defenses he might possess,
they are no longer active if you manage to polymorph him into another form.
Bolts of Polymorph fired from a crossbow will work best, though the wand might
also work on occasion. Since he has such a good AC, and and great saving
throws, it will be difficult to hit him and get the magic to work on him, but
it can be done. Once the mighty Elminster has been reduced to the lowly,
pathetic status of a squirrel, you can crush him like the vermin he really is.
-It seems that this strategy does not work on all 'versions' of Elminster. It
does not work on the Elminster that appears to you in Beregost, but it does
work on several other appearances of his.
ArchMage of the Realm of Lodus
Killed two drittz's at the same time standing toe to toe... then brought a third
in and killed him as well without resting. This with only a single character.
Fighter 7 / Conj / 17... But can be done with Fighter 5/Conj 9 if it's all that
important to you.
How.. Get speeded up, take your AC way down with spells, then cast mirror image
alot.
Also killed 4 of those demonKnights... that thing that paralyzes you and casts
Power Word Kill
Reason is because when there are multiple ones, they sometimes paralyze each
other.
