will buy these heads of Wyverns?

If you're referring to BG1, then the priest at the temple of Lathander to
the east of Beregost will give you some cash for one of them. I heard the
metalsmith in Beregost will also buy one, but I'm not sure.

I beleve it's the femal officer that buys scalps you are thinking about.

You sell them to the head of the Temple east of Beregost. (Or the priest at
Nashkel temple...? Not sure which.)

Beregost Temple buys one, and only one, for 2,000.

Officer Vai in Jovial Juggler, Beregost, buys any amount of
heads for 1,000 each, forever. (That is, as long as you talk to
her with a scalp in inventory.)

The innkeeper at Feldpost's Inn in Beregost will buy them off you, if you
have a stockpile of the things. I'm pretty sure of that.
