alcohol ingestion during wine tasting

Does anyone have any information relating to how much alcohol one absorbs
during a wine tasting if you spit? I presume there must be some absorption
through the tongue and in my experience it is difficult to get a good swill
around the back of the taste buds without swallowing. Couple that with the
alcohol inhaled and the fact that it is pretty difficult to go through an
entire tasting without letting the odd glass of better wine slip down (!) I
wonder if there is still the possibility of exceeding the limits for
driving. Especially if at a major tasting of say 30 or more wines.

Steve,
I once saw it written (by Tom Stevenson I believe) that you absorbed about
1cl of wine every taste (even if you spit you don't get rid of everything).
So 75 wines at a tasting would be the same as drinking a bottle. I'm not
quite sure I can believe it's quite that much, but certainly spitting and
driving isn't always safe.

Richard,
I think that you must have misunderstood what was written. The average
"taste" of wine is roughly 1 cl (=10 ml), so he was probably referring to the
quantity of wine in the mouth rather than the quantity of wine swallowed.

At Australian wine shows judges often taste 150 plus wines in a day (I've
done it) and don't get whacked out of their brains while so doing. (tho' the
question could well be asked how well their palates stand up on the 75th 1
year-old shiraz!) A few years ago the police breathalyser squad was invited
to test judges after a day's tasting at the Adelaide wine show. From memory
the highest blood alcohol recorded was .02 (the legal limit in Oz is .05).
Obviously there will be high mouth alcohol within 20 - 30 minutes of the
last taste - but this should dissipate rapidly. One assumes that the judges
are assiduous in their sippin' and spittin' technique, rather than sippin
and swallowin'.

I've heard of judges tasting 200 wines in a day.
By spitting instead of swallowing, not only do they leave themselves open to
drive home, but can actually keep tasting objectively all the way to the end
of the day without losing taste.
I don't believe you ingest much alcohol this way at all if you spit
*properly* and don't swallow the tail end.

The largest tasting I ever did was 73 wines in 2 hours. I can tell you I was
hardly in a fit state to drive. Having said that, I did do a vertical
tasting of Best's Bin 0 the other day. comprised of 20 vintages between 1965
and 2000 in about the same timeframe and did not have a problem whatsoever.
Having learned from the first experience described above, I did make sure I
had a decent lunch and a quick bite to eat. When I mentioned this to a
friend of mine who is a General Practitioner, his reply was: "You either did
well having the big meal for lunch and spitting OR your liver is getting
used to larger quantities of alcohol..."

Cheers,

H.

I also have gone to trade tastings and tried approx. 75 wines or more,
spitting of course. I don't think much alcohol is ingested at all, I've
rarely felt a buzz. The worse thing is the purple teeth!! And try not to
wear white shirts.

On thinking about it, I think I'm a factor of 10 out. (Although I believe
that the Tom Stepehenson arrticle did suggest 1cl of wine absorbed for
every spit). More likely to be 1ml. There have been reports of tasters being
over the driving limit having spat .

I'd say very little at all. yesterday afternoon I tasted in excess of
120 wines at two tastings, and was pretty sober afterwards. I think if
you are careful to spit, you've got no problems with driving. But you
do have to be careful to spit! The real problem I find is with my
teeth. They start to hurt after this many wines.
