Hi to all readers of this group. I recently posted a query about people's
favorite sushi recipe, but to no avail, I have received no replies either
directly to me or posted to the group. I thought this would be a great topic
to cover, or maybe it has been done before. I am new to this group and have
only been following it for a few weeks. I hope others would like to share a
little of their inspirations. Anxiously awaiting a response, - Michele

I have never made this but I have eaten it many times at my Itchaban's
Hartford CT. They call it a sun rise. It is Tuna raped around rice. This
is placed like a salmon row sushi. The top is filled with flying fish row
and it is toped with a qual egg.

I also love Itoco. It is a marinated whole baby octopus. I do not know
ther marinated.

I imagine you haven't seen many sushi recipes posted because, well, I don't
see sushi as being a 'recipe' kind of thing. It's more of an craft in
in creation and a religious experience in eating. A more appropriate
question would be "what is your favorite type of sushi".

A list of recipes would be silly. More reasonable is to talk about
techniques. There is a technique for making nigiri sushi, for cutting sashimi,
or for making nori-maki or hand rolls. Once the technique is learned, each
creation is a variation on that theme. eg. Sake: cut salmon put on rice;
Saba: Cut mackeral put on rice; Ebi: cook shrimp, butterfly, smear on wasabi,
put on rice; etc.

Anyway, after all that, I think my favorites are Yellowtail, Mackeral, Sea Eel
and Tuna - but it really depends on if the fish is perfect or not. When perfectly
fresh, the texture is awesome, and the flavours meld with the rice beautifully.
When it's not made well, the rice is a sticky pasty ball, and the fish is
rubbery and tastless, and I'd rather have shake-and-bake.

A new favorite is the "prawn tempura roll." It's made with a tempura-ed
shrimp, avocado, cucumber, that weird mayonnaise, then rice and seaweed, as
per the norm. Highly recommened!
