Does anyone have recipe for unagi sauce? (you know that sweet eel sauce you
put on top of Unagi) Thanks in advance.

Quick and dirty recipe for unagi tare . . . ingredients: soy sauce, brown
sugar and sake. Bring soy sauce and brown sugar to a boil. Add sake.
There are many variations. Vary ingredients to suit.

Yeah, there's sort of eel taste in that sauce, so it must have some kinda
eel gravy or extract in it. Oh well..thanks anyways, I'm gonna ask my sushi
chef tomorrow when I go to work.

The traditional sauce is made from an actual salt water eel. Bones, head,
everything. Add the eel "stuff" to 7 parts water, 1 part soy sauce, 1 part
mirin (cooking sake), and 1 part sake. Let it boil for 45 minutes to an
hour. You are trying to get the essence of the eel into the broth. Strain
and re-boil. Add 4 cups of white sugar. Sweeten to taste. If it is too
salty, add more sake.
