I have always enjoyed the "shrimp" part of ama ebi, but on the occasions
that I have also been served the deep-fried head part, I have been
unsure as to how to eat it.

Does one consume the entire thing? Or do you only eat parts of it?

Thanks,

Bruce

Start eating from the rear of the head so the feelers don't stick into your
gums or the side of the mouth. ;-) No, I don't try to eat the whole thing
in one gulp.

I was talking to a chinese girl in a sushi bar a few weeks
ago and she got ama ebi and when the heads arrived she snapped
off the feelers one by one and ate them, crunch-crunch-crunch.
I forget what she did with the rest.

Hmmm, I'm Chinese, 50 years old. You can always learn something new in a
newsgroup. I will try breaking off the feelers and maximize the enjoyment of
consuming the little "bugger". I refused to eat the heads when I first
started eating sushi. A sushi chef who didn't understand English put them in
front of me and didn't understand the word "No". Good thing he didn't! I
said what the hell, "Bottoms up!"

I eat the whole thing. Occasionally if I am in a playful mood, I may
nibble the two feelers off first. Trust me,
the who thing is edible. Also, amaebi are small shrimp in general. A couple
of bites and it's gone.
You should try a Kuruma Ebi head sometime.

I've eaten Botan Ebi head -- around 3 inches long (not including
feelers). How big is a Kuruma Ebi head?

I would guess about or close to 4 inches
It wasn't fried..it was salted and grilled/broiled
to a crip.
I had the other part of the shrimp raw and
live, wriggling in my mouth.
Yummmmm

If the head is covered by a very thick shell, I peel this part off. It is
difficult to chew and very hard to digest. Other than that,,,,,,,, go to
town.

I ate some Botan Amaebi heads in SF that were huge!
The uni is also huge, but not as tastey as East Coast uni
(not to start one of those E. Coast vs W. Coast things:)
