Hi all!

I was wondering if any one knew what the shelf life for wasabi powder
is. Since it is a dried product, I'm guessing a pretty long shelf life.
I've still got a little can that's about two years old (I can't afford
to make sushi often). The last time I used it (months ago), the flavor
was still about the same. Do you think it's still ok, or should I just
throw it out? (There's no date on the can, of course)

I would probably use it. Dried stuff lasts long. I normally keep an opened
can in a refrigerator or freezer. A better kind is wasabi paste that comes
in a tube and has a defined expiration date, but it does contain a small
portion of genuine grated wasabi in addition to usual horseradishes. If it
were an unopened can, keeping it in a freezer would go almost indefinitely.

It will go bad after a period of some years. I now keep it in a plastic
bag in thr fridge.

My experience is that if the powder is kept in an airtight container it
keeps quite awhile. Might as well mix up a small batch and try it.
Nothing to lose, eh? However, I would suggest purchasing prepared wasabi
in a tube. A company called S&B makes a good, authentic product. It's
avail. @ Japanese markets. Good luck and clear sinuses to you.
