I tried ordering from my local asian grocery, but they are limited to
what they will carry because of min. qty. from their supplier. (I can
understand that). Almost ordered from www.sushifoods.com, but had a
heartattack when the shipping was more than the food. (not their
fault, and I don't know anyone with which to share costs) Local
supermarket has something they call sashimi tuna, but I am reluctant
to buy sushi ingredients from a store whose seafood mgr was unaware
that sashimi was intended to be eaten raw...
Anyway, I'm planning a trip to the DFW area soon and thought I might
see if any of the asian groceries might carry something sushi grade.
Anyone have thoughts on which stores I might stand a little better
chance with?

This is a Japanese Grocery and he supplies most of the sushi bars in
the DFW area. There are all the regular things in his coolers,
including Uni, Gari, all the different fish eggs, knives, rolling
mats, etc.

Sorry, can't help you with DFW, but I can attest to the quality of
sushifoods.com. Yeah, shipping is high, but it's overnight, and it's
all great stuff. I recently got some ankimo and uni (and some other
stuff) from them, they were both great. The uni was actually the BEST
tasting I've ever had, and I had some after 3 or 4 days in the fridge
and it was STILL great, no ammonia or staleness or anything.
I'm in Savannah, so we have great local fresh fish shops here, but
when I was in Tucson, I'd go to either a gourmet or regular
supermarket for fish. If you ask, they'll tell you the day it came
in. I've been making sushi at home for about 10 years, and a lot of
that fish came from the supermarket. The sight, smell, and feel will
tell you if it's fresh enough. I've NEVER had any problems. Never.
Don't know if you're confident enough yet to trust your instincts, but
it's worked for me for years. They generally won't tell you it's
"sushi grade" I'm assuming for legal reasons, but, if you trust
yourself I'm sure you'll be fine.
