Species name: California Yellowtail vs. Japanese Yellowtail

California yellowtail: Seriola lalandi
(Japanese = Hiramasa)

Japanese yellowtail: Seriola quinqueradiata
(Japanese = Hamachi-young; Buri - adult)

There are other subspecies around the world, but keeping the scope to the U.
S., the "hamachi" market is sourced from:

1. Japan: Hamachi, sometimes Buri
2. California: Hiramasa(not common in market)
3. Florida + Carribean Islands: Florida Kanpachi(Seriola dumerli, another
species of Seriola, commonly known as Amberjack).
