Has anyone a recipe for this (and maybe pictures?)

What other sushi is made with *smoked* (not grilled) fish?

Gari is a condiment eaten between different types of fish
to cleanse the palate. A lot of people don't know this, so
they end up putting gari on their sushi. I used to as well,
before I knew.

Unagi maki, bagel maki, cajun maki.. insert whatever grilled
fish into maki center. No recipes are really needed for sushi
except how to make the rice or maybe a spicy sauce.

Thanks. I did know that ;-) But I came across "Saba Gari" on the menu of a new
restaurant in town and I do not know of a "specific" mackerel maki. I do get
the impression they use the gari with the maki. The restaurant is owned by
Japanese people. They do have a little touch of fusion, so maybe there is the
answer ..

What mackerel maki do you know, that being maki inside out?

Yeah it sure sounds like a mackerel gari maki. They probably see a lot of
customers putting gari on their sushi and decided to make a maki just for them.

Only thing I know is the saba shiso maki at Sushi Island, Wakefield, MA.
I love it. The two strong flavors work so well together. But that one is
not inside out, just standard hosomaki.

Oh sorry, smoked salmon maki. I like my smoked salmon on bagels,
so I refer to it as bagel sushi.

I believe that saba gari maki is a hosomaki using Saba (mackerel) which has
been
soaked in konbu (konbu-jime) and gari (pickled ginger). Unfortunately I have
not been
able to find any pictures.
Although smoked fish certainly exists in Japan, I can not think of any
traditional sushi made
with smoked anything. Most of the fish if not raw is grilled. In the U.S.
smoked salmon is
commonly used in both nigiri and hosomaki forms. I've heard of one place
that uses Karasumi
(mullet roe) which is smoked but only as a topping, in place of say masago
or tobiko.

It is impossible to get shiso in Holland. I have tried & tried ...

I refer to smoked salmon for sushi as bagel sushi.. I wouldn't expect
to find an actual bagel in a sushi bar. The smoked flavor overpowers
the delicate flavor of sushi rice. I'd rather have raw salmon.

Man that's one ugly fish. Looks like a catfish, kind of.. with a touch of
eel towards the tail. Hey, I saw a news story about snakeheads in local
ponds that are eating all the local fish. They plan to poison the snakeheads
to stop their spread because they can walk on land and survive out of
the water for three days. Looks somewhat similar to the Meerval.

That is a European wels catfish.
The namazu catfish of Japan is closely related to this.
And you can definitely make sushi if you are so inclined....
..just grill and baste exactly like unagi.
You may not be able to tell the difference.
