8 eggs
2 tbsp. water
Salt & pepper to taste
1 tbsp. Olive Oil (not virgin, light will do)
1 tbsp. Butter
3 oz. boursin cheese
1 tbsp. chopped scallions
Whisk the eggs, water, salt and pepper in a bowl. Heat the oil in a
round, medium-sized frying pan on medium heat and add the egg mixture,
then turn up the heat to medium high. When omelet is set, crumble the
cheese on top. Then fold the omelet over and remove from pan to
serving dish. Sprinkle with scallions. Serve with toasted bagels and
the rest of the boursin.
