4 cups hot cooked rice
1/2 cup chopped roasted peanuts
1/4 cup butter or margarine
1/4 cup honey
1 tsp ground cinnamon
1/2 tsp (or less) ground ginger
Chopped parsley (optional)
Combine rice and peanuts; set aside, and keep warm. Combine butter and
honey in a saucepan; cook over low heat just until butter melts. Stir
in
cinnamon and ginger; pour over rice mixture, stirring well. Sprinkle
with
chopped parsley, if desired. Serves 6.
