Parmesan Cheese Biscuits


These take just minutes to make and the preparation does not even
require rolling out the dough. This quick savory biscuit would
greatly complement a spicy tomato sauce.


2 cups all-purpose flour
1 tbsp. baking powder
1 tsp. salt
1/4 cup vegetable shortening or butter
3/4 cup heavy cream
1/3 cup grated Parmesan cheese


Preheat the oven to 500 degrees. In a large bowl, sift together the
flour, baking powder and salt. Cut in the shortening or butter with a
pastry cutter or 2 knives until the mixture resembles coarse meal.
Add the cream and Parmesan, and stir until just blended. Flour your
hands and pull off an egg-size piece of dough. Pat lightly to flatten
into a circle. Place the biscuits on an ungreased baking sheet 1 inch
apart. Bake for 8 to 10 minutes, until golden brown. Remove to a rack
to cool or serve immediately. Makes 12 biscuits.
