Crispy fried prawns in green rice - Tôm chiên cốm
Ingredients - Serves 4
Tamarind sauce:
Ginger finely chopped, 4 teaspoons.
Chopped garlic, 2 teaspoons
Chopped chili, 2 teaspoons
Chopped shallot, 2 teaspoons
Fish sauce, 1 tablespoon
Sugar, 1 tablespoon
Cooking oil, 1 teaspoon
Tamarind paste, 60 g
Passion fruit, 1/2 pcs
Method
Put tamarind paste and passion fruit into a small bowl. Add 100 ml boil
water.
Stir the mix until the entire flavor of tamarind and passion fruit comes
out.
Heat the wok and then add oil, garlic, shallot and fry till fragrant.
Then, add chili and the mix of tamarind and passion fruit juice.
Seasoning with fish sauce and sugar.
Crispy fried prawns in green rice
Ingredients
Prawn divined 12 pcs
Green rice, 75 g
Egg York, 3 pcs
Rice powder, 30 g
Tapioca, 20 g
Method:
• Mix rice powder and tapioca in 1 bowl and stir the egg York in another
bowl.
• Roll the prawns over the mix of powder, and then, over the egg York
and then roll over the green rice.
• Deep fried the prawns until cooked.
• Use the chopsticks to take out the prawns from the oil and put on a
kitchen tissue.
