What can I do with leftover seviche?

Over the holidays we had some mexican dishes
including a nice fish seviche (marinated-cooked
in lime juice) and shrimp cocktail (a similar
process of marinading. It was really good.

But, yes, I made too much. :-)

Not wanting to waste something like good fish,
I was wondering if anyone know of a way to
prepare some kind of leftovers from seafoods
that have been "seviched"? I decided to try
and make a soup but it didn't quite work out
(lemon/lime much too sour). But for the next
time I'd like to be prepared.

Any suggestions?

add more veg's and have a salad
add it to cold noodles

Did you make "real" ceviche? Fresh fish or another type of seafood marinated in
lime juice, onions, cilantro, etc? (Different areas of Latin American favor
different types of ceviche.)

I'm always a little leery of food poisoning when I make ceviche and discard what
isn't eaten after serving.

fish and chicken are not to be saved! Why do you think fish and chicken soup
is used in Petri dishes to quickly cultivate bacterium?

Could you broil it? It might get tough, but with the lemon and chilies it
should taste good.
