Jerry,...you just gotta get into these potatos with skin-on. Like
Kili said, they're great just about ANY way you have potatos. Go to a
TGI Fridays and order the Loaded Potato Skins Or, get some TGI Fridays
frozen potato skins at the supermart. The frozen aren't as good as the
restaurant ones or the ones you can make yourself, but they ain't bad
if you're in a hurry. The skin-on french-fries aren't loaded with the
skin; most fries don't even have one side with skin on. The skin just
crisps up and tastes good. Give 'em a try and let us know what you
think of them. Have fun, surf safe....Cracker

I think I peeled potatoes a couple of times back in the 70s, when I
started cooking on my own--some recipe called for peeled potatoes, so I
did. I stopped peeling potatoes soon thereafter. (I may've told to peel
potatoes as a kid, but I'm not counting that.)

Since then, I just bake potatoes with the skins on, boil them with the
skins on, cut them up and fry them as slices or wedges, etc. But I
never, ever, peel them. Besides the taste and texture, more vitamins in
or near the skin.

(I've done any deep frying. I mean to change this, but balk at the
storage options for used oil, etc. I'll probably try some deep frying
with my Lodge Dutch oven pots. No need for a counter-top deep fryer,
which takes up space, and is "single purpose.")

Jerry's brother is repulsed by skins on potatoes because he has never
had to actually peel them. All of the Sauk boys were used to Mom
peeling everything for them.
