from his mouth (sounds gross, I know), but he held it up to the light. You
could see through it. You could see perfectly through it. If that's not
paper-thin, I don't know what is.

Belgian-style.
I also love Tartar sauce, which is, of course, mayo plus some
pickle-like additions.
There are dozens of other variations of mayo, including Hollandaise and
Bearnaise sauces.
Alton Brown did a good show on the making of mayonnaise and the many
variations on it.

There is paper-thin bacon for the same reason there is paper-thin ham,
paper-thin beef, etc. All it takes is a slicer set to the proper number
of mils.

Bacon is the complete deal, the lean part (such as it is) and the fat,
which is part of "bacon."
