Thanks for this Stevel, pretty good shit, learned a bit about trimming
a brisket there.

I thought it was pretty good video too. I don't do briskets often,
because it is $40 - $50 for a packer cut. I liked the trimming some of
the thinner part of the flat end. Makes sense. Though if there were much
meat, I would just cook it separately and add it to beans, like the flap
part.

Nice video. I watched a couple others of his to. I like how he mentions
to install a thermometer in a new cooker. I've never been very good at
using the palm of hand over fire to determine if it is the right
temperature for a cook.
