The engineering and cooking teams at The BBQ Guru have been working hard on
the design and function of the new Onyx Oven. We wanted a cooker that was
extremely efficient and rugged, yet lightweight and versatile. After
building a couple prototypes and cooking on them week after week at BBQ
competitions around the country, we have perfected and we present to you,
The Onyx Oven!
The Onyx Oven is an extremely versatile cooking machine. No matter what it
is you want to cook outdoors, it can be achieved with the Onyx.
. Cold smoking cheese, fish etc.
. Jerky drying
. Slow cooked barbecue (pulled pork, brisket, ribs etc.)
. Bread/pizza baking
. Baking casseroles, beans, stews and desserts
. Roasting meats and vegetables
. Grilling steaks, burgers, brats and more
The Onyx Oven's insulated, double wall construction makes it very fuel
efficient giving you long burn times with very low charcoal consumption.
It is made for use with a stainless steel catering pan to be used as a
removable water/drip pan, this allows you to use the Onyx as a water smoker,
a dry smoker, a grill or even a roasting or warming oven.
It holds three 13"x22" shelves with a perfect capacity for backyard
barbeque enthusiasts and competition BBQ'ers. There are three (3) shelf
positions that hold full catering pans as well.
(This is a very convenient feature that comes in handy at almost any event).

I have their controller on my Bradley and really appreciate the
quality and control of the device. What their new oven reminds me
of is a slightly bigger Bradley. If it follows their other
products in terms of quality and design, it should be a winner.
The price is very high, IMHO.

The price point caught my attention, too, Nonny. At first blush, it is of
similar...if not better quality... than the small Stumps. The Stumps, while
smaller than the Onyx, is priced near $600.00 more. The Onyx is also less
expensive than similarily sized Cookshack products. I would say that the
Onyx is as easy to load and configure as the Cookshack and the Stumps. It
will also be easy to load and configure as the Great Outdoor Smokers (which
are about $600.00 less expensive, is not as good a build quality, nor are
they insulated, and they use a different fuel source, propane, to keep the
temperature regulated.).
I think the Onyx is priced for those considering the Stumps, Cookshacks, and
kamado-style pits. Those who are struggling to even consider a WSM will
certainly not be part of the target market for the Onyx.

Price seems in line, especially if it is insulated. I'm a big fan of
insulated cookers because of the high efficiency. A little fuel goes
along way in them as well as better temperature control.
I often thought about getting one of their controllers but stuck with my
modest cooker improvements and now run good temp profile through out the
cooking time so much so that I put the lid on and forgot about it.

Looks like a great unit, Dave. Tell me, do you know of a similar
product that works on propane? I'm in the CO Rockies, out in the
boonies, where hardwood is non-existent and lump is outrageously
epxensive. I'd consider a like featured/priced smoker for use with
gas heat and wood chips. TIA.

18" & 24" creates a wide range of usable heat that can be used for
smoking ribs, fish and turkeys as well as baking pies and breads. It is
roomy enough for Dutch ovens or your favorite cookware. The convenient
"snap ignition" is coupled with a finesse style propane gas valve that
translates into 20,000 maximum BTU's of usable heat.

Like features means insulated, like the Onyx. This is one cold Winter
up here and your smoker would be useless. I once owned a Bandera, so
know how much even a cool Summer breeze can drop temps 20-30 deg in a
heartbeat. Screw that. I'll pay extra for insulation/dbl wall, etc.

I'm in Co. too and I use a Cookshack, with great results.
I find the thermostat is accurate enough to compensate for any sidewall
temp issues, but I'm over foothills way, so severe cold isn't usually a
concern.
Would a green egg be of any use?

Actually, this is nothing at all like a Stump's Smoker. Except the "Box"
shape. Maybe you are thinking of a Backwoods?
I have cooked on all three of the brands, owned a Backwoods, and currently
own 3 Stump's Smokers, 2 of the vertical boxes, and the Tailgater. Stump's
doesn't use a water pan in the vertical smokers, Backwoods does.
I didn't like the light weight of the Onyx, I thought that it was very
flimsy, but the one that I used was a prototype, and in real life, if
Shotgun Fred and BBQ Bob Trudnuck are backing it, the Onyx must certainly be
a very good product.
